Choux pastry
I've not tried this out but am putting it here so I don't lose it
I LOOOOOVE Choux pastry
The basic recipe needs only ...
• 150 g flour, all-purpose, sifted
• 150 ml water
• 2 pinches salt
• 3 tsp butter (50 grams)
• 3 large eggs
Now let's look at the process step by step ...
1. In a small saucepan, add the water, salt and butter and cook over medium heat. Then remove from the heat, add the flour and stir with a wooden spoon to smooth. Return to the heat and cook for about 1 minute, while stirring with a wooden spoon until mixed and leaves the sides of the pan.
2. Remove from the heat and add the eggs one at a time, stirring constantly until the pastry forms a stiff glossy paste (it will be slightly sticky).
3. In a buttered sheet cut choux either with 2 spoons or using a piping bag, to the size of a walnut.
4. Bake at 170 degrees in preheated oven for about 35-40 until they inflate, become golden and crispy. They are ready when you cut in half and their inside is blank.
5. Let them cool well. Cut it in half and fill them with anything you like!
